Italian Cow Milk Cheese

Piave Vecchio

I really like this cheese. Actually, Piave Vecchio is by far my favorite cheese, and I think probably the greatest cheese in the world of all time.

Quick Notes

  • Made in Veneto, especially tied to Belluno in the Dolomites, with PDO protection.
  • Cow milk, hard texture, golden interior, sweet nutty flavor, caramel/toasted notes, and a slightly grainy aged-cheese bite.
  • If you like Parmigiano-Reggiano and aged Gouda, this sits right in that glorious zone for me.
  • Great on a cheese board, grated over pasta or risotto, shaved onto salad, or eaten directly while pretending to be civilized.
  • I find it at Publix sometimes, and it also shows up at Whole Foods and Eataly.
