Egg Yolk Mashed Potatoes
Small-batch mashed potatoes with one egg yolk for extra richness.
Ingredients
- About 1 lb Yukon potatoes, cut into 1-inch chunks
- 1 egg yolk
- 3/4 tsp salt, plus more to taste
- 2 Tbsp butter
- 2 Tbsp half and half, cream, or milk
Instructions
- Boil potatoes until tender.
- Drain and mash with butter, salt, and dairy.
- Stir in the egg yolk while the potatoes are hot and fluffy.
