Mom's Chicken and Noodles
This is one of Mom's comfort-food recipes. She always served hers with blueberry muffins.
Ingredients
- 1 small whole chicken
- 2 bags wide egg noodles
- 2 large containers chicken stock
- Tarragon, bay leaves, garlic salt, dried onion, and Parmesan
Instructions
- Simmer the chicken in stock and water with tarragon, onion, garlic salt, and bay leaves until cooked through.
- Remove chicken, cool, debone, and shred what you want for the noodles.
- Taste and adjust the broth, adding more stock if needed.
- Boil noodles in the broth, then add chicken at the end to warm through. Finish with Parmesan if you want.
