Smoked Sausage and Chicken Gumbo

Ingredients
- Oil and flour for a dark roux
- Smoked beef sausage and boneless skinless chicken thighs
- Hard-boiled eggs
- Onion, celery, bell pepper, garlic, bay leaf, oregano, thyme, pepper flakes, hot sauce, beef stock, and water
- Rice, green onions, and file to serve
Instructions
- Cook roux until it is the color of milk chocolate, then remove from skillet.
- Brown sausage, cook the vegetables and seasonings, and brown chicken.
- Combine stock, water, eggs, roux, sausage, vegetables, and chicken; simmer until deep and rich.
- Serve over rice with green onions and file.
